Nutella Ferrero Rocher Cake with Nutella Ganache and Nutella Butter Cream frosting

My lil baby is no longer the wriggly lil caterpillar i once knew…She is beautifully blossoming into a very naughty lil curly haired happy lil monster bringing  light and warmth and so much of sunshine into our lives.

This is the cake i baked for her 2nd bday..White chocolate swirl cake, with nutella buttercream and nutella chocolate ganache….decorated with toasted almond slices and ferrero rocher chocolates.

Very easy and quick to make for a working mother like me. The cake mix saves you lots of time, the ganache is made in the microwave and buttercream frosting gets whipped in a jiffy!

For the cake you’ll need:

1 box of white chocolate swirl cake mix from Betty Crocker

For the butter cream frosting you’ll need:

  • 225g butter, room temperature
  • 1½ cups icing sugar
  • 125g dark chocolate, melted and cooled slightly
  • 150g Nutella

For the Ganache you’ll need:

  • 1/4 cup nutella

  • 1/4 cup chocolate chips
  • 1/4 cup heavy cream

For decoration:

  • 9 Ferrero Rocher ( 5 for decoration, the remaining 4 to gobble down so you dont attack the cake LOL)
  • Toasted Almond flakes/slices, around 1/2 to 1 cup

Method:

Bake the cake as per the instructions mentioned on the cake box. I used a medium deep dish round loose bottom baking tin. Let the cake cool aside.

Meanwhile whip up the buttercream as follows:

  1. Place the softened butter and icing sugar in a large mixing bowl and beat until smooth.
  2. Add the slightly cooled chocolate and continue beating until combined.
  3. Add the Nutella and beat on medium-high speed until the buttercream is light and fluffy.

OR you could just dump all the ingredients in one bowl and whip on top speed like I actually did! lol

 Slice the cake midways with a serrated bread/cake knife. and Spread the buttercream generously on top of the bottom half and place the top half on it. Then spread some more buttercream all over the cake evenly and generously whilst helping yourself to some generous spoonfuls too 😀

 Decorate with toasted almond flakes all around the bottom of the cake.

 Keep it in the fridge so it sets for about 10 mins or so…

 Meanwhile prepare the ganache as follows:

Combine Chocolate, nutella, and cream and microwave for a minute. Stir until chocolate chips are melted then pour over the cake. To make it easier, you can freeze/chill the cake for 10 minutes first.

 Place the Ferrero rocher chocolates on top and set the cake in the fridge . Remove about 15 minutes before serving.

 It was a super hit at the party. A Truly TO DIE FOR cake!
