Fish fillets cooked in Roasted Onion-Garlic Curry

White fish fillets cooked in roasted onion & garlic sauce. The added flavor comes from directly roasting the onion & garlic over the fire!

Ingredients:

500 -700 gms white fish fillet cut into chunks

1 small bell pepper diced( Any color)

1 onion sliced thin

1 small tomato diced

1 tsp fresh grated ginger

2 tbsp hot curry powder

1 tbsp brown sugar

juice of 1 large lemon

a splosh of vinegar ( if you prefer the curry to be more tangier)

For the Curry:

Grind to a thick paste with a little water, the following-

2 onions roasted well on direct flame, let it cool , and scrape off most of the charred layers.

1 full garlic pod roasted on direct flame( let it cool & peel of charred layers as much as you can. Make sure you don’t burn the garlic. it’s roasted perfect within 5 -10 mins on direct flame)

2-3 green chillies (optional, if you can take the heat)

ginger , the size & thickness of your thumb

Method:

In a cooking pot, heat some oil and fry the onions till soft and turning pinkish brown. Add in the grated ginger and saute for 30 secs.

Add the tomatoes and salt to taste, and fry till they turn slightly mushy.

Add the curry powder & sugar and saute for 30 secs. Then add the wet paste and mix well. Fry for about 2-3 mins well, stirring occassionaly.

Add in one cup of water, splosh of vinegar and mix well. Bring to a boil, add in the bell peppers and fish fillets and cook for about 5-10 mins. Add the lemon juice and stir.

Serve warm with a bowl of steamed rice or Indian breads!
